Vegan Mincemeat Cupcakes (Hold the Meat)

If you’ve been making homemade treats, chances are you have a lot of random bits and bobs left over. Turn them into vegan mincemeat cupcakes! No, it’s not meat, but instead a mixture of ingredients, usually dried fruits. I like to make my own mince pies and treats so I know they’re vegan friendly. We also all know that home-baked goods are better than store-bought.

Here’s a great vegan friendly that’s also gluten free and lactose free. It tastes amazing and is really simple to make. The batter will also last for a good few weeks at least since there’s nothing to go off in the mix. This recipe should make 12 big muffin sized cakes, or around 24 mini cupcakes.

Serve with soya whipped cream if you can find it, and eat while still warm. The melted sugar and zest are great while still a little melted. Hope you enjoy this vegan mincemeat cupcakes recipe.

Ingredients

350g self raising flour

1 tbsp Baking Powder

175g Caster Sugar

135ml Sunflower Oil

375ml Water

250g Mincemeat

1 tbsp Demerara Sugar

1 Zest from Orange

Cinnamon

Whipped Soya Cream

Instructions

Preheat the oven to 370 degrees.

Take your flour and baking powder and then sieve the flour and baking powder together in a large mixing bowl.

Next you want to get the rest of your dry ingredients and add the sugar and mix well.

Pour in the oil and water and whisk it well. It shouldn’t be too thick but it needs a good whisk together.

Now add all your mincemeat and fold in the mincemeat until its nicely mixed through.

Fill your cases roughly 1/2 – 2/3 full before cooking.

In a little bowl, take your demerara sugar and mix the sugar and cinnamon together and sprinkle on top of your cakes.

Take an orange and grate the zest on top of the cakes.

Bake the muffins for 15-20 minutes.You can also make mini-cupcakes; these take roughly 7 minutes to cook through and make for easy recipes. Normal-sized cupcakes will take about 15 minutes.

Once they’re cooked, allow them to cool for 5 minutes.
