Vegan Meatloaf Recipe: It’s Not Meatloaf It’s Vegan!

vegan meatloafMy kids love the bean burgers I make, so I thought why not make a vegan meatloaf recipe?  My kids and husband are not vegan or even vegetarian, but I only cook vegan at home.  I have dramatically changed the way they look at food and in the process their diet by default is at least 80% vegan (patting myself on the back).   Sometimes you just want those comfort foods and this is a great one.  Give it a try and let me know what you think!

Ingredients

1 40 oz can of Kidney Beans

1/2 Onion, chopped

2 Cups Cooked Brown Rice

1 1/2 Cups Rolled outs or crackers

1/3 Cup BBQ Sauce + BBQ Sauce for top of loaf

2 tsp liquid smoke

1/2 tsp each of salt and pepper

Instructions

Drain and rinse kidney beans.

Smash kidney beans (I get in there with a potato masher and then I use my hands).

Add onion, Rice, Oats, BBQ sauce, liquid smoke, salt and pepper.

Using your hands, mix all the ingredients together.

Once mixed place into a baking pan (I use a bread pan and as you can see from the picture…it is well loved).

Pour BBQ sauce on top of the loaf and spread it evenly across the top.

Place in the oven at 325 degrees and cook for 40 minutes.
