
Vegan Chicken-less Noodle Soup
Just in time for fall/winter. Something to warm you up that is oh so yummy and oh so quick to make!
Chicken-less Noodle Soup
Noodles:
2 C Flour
1/2 C warm water
1 tsp salt
Soup:
1 yellow onion
6 or so stalks of celery
2 Tb minced garlic
5-6 Carrots
16-20 C vegetable broth
1 Tb Italian seasoning
Chick’n less chicken (purchased at Wegmans-you can use another brand)

Ingredients
Vegan Chicken,
Water
Celery
Minced garlic
Carrots
Vegetable broth
Italian seasoning
Salt
Pepper
Oil – optional
Instructions

Noodles:
Mix dough until it forms a firm dough ball (add more water or flour if necessary) I doubled the dough recipe because I made a huge pot.

Once you have the firm ball, knead the dough for 5-10 minutes

then break up into 3-4 balls and set aside for a few minutes.

Roll dough out to the thickness you want your noodles. and cut into strips.

Soup:

I cut up the onion and sautéed it with the garlic and celery for a couple of minutes (can either use oil or water to sauté it) Added the cut up carrots.

then added 20 C of water (mixed with vege bullion), the carrots (cut up), the Italian seasoning and the noodles.

Brought it to a boil then reduced the heat and let it simmer for 20 min.

I also added pepper (about 1 tsp) for flavor.
