The Perfect Vegetarian Lasagna

This delicious vegetarian lasagna is one of my all time favorite recipes! I love to cook it on a Sunday night, have it for dinner, and save the rest for leftovers for the rest of the week. Being able to open my fridge and munch on this dish gives me a smile from ear to ear. It’s also perfect for those cold winter months when all you want is that warm comfort food. Lasagna is a perfect dish that everyone loves, and it absolutely hits the spot for me! Here’s how I make it:

 

 

 

 

 

 

 

I just pulled my vegetarian lasagna out of the oven and it looks absolutely beautiful! With all the fresh colors of the vegetables, it looks amazing! I took my first bite, and I was in heaven. Vegetable-Lasagna

Ingredients

1 box of whole wheat lasagna noodles

1 – 24 ounce jar of marinara sauce (store-bought or my marinara sauce recipe)

4 cups mozzarella cheese, shredded

1 cup parmesan cheese, shredded

2 yellow squash, chopped

2 zucchini, chopped

½ – 9 ounce bag fresh spinach (about 5 ounces)

1 – 10 ounce bag carrots, shredded

½ onion, chopped

2 Tbsp Italian seasoning

Instructions

Preheat the oven to 350 degrees.

Bring a pot of water to a boil, and cook the lasagna noodles. Follow the directions on the box of noodles. Once they are done cooking, drain the noodles. You may want to pat the noodles dry before laying them in the pan so the lasagna doesn’t get too watery.

Chop the zucchini, squash, and onion. If you have a food processor, it makes it very easy to chop all the vegetables. Add the shredded carrots and the Italian seasoning to this mixture.

Put a thin layer of marinara sauce at the bottom of the lasagna pan. I am using a 13 by 9 clear glass Pyrex, but you can use any 13 by 9 pan you have.

Put a layer of lasagna noodles on top of the layer of marinara sauce.

Add a thick layer of spinach.

Add a layer of the mixed vegetables. This will add some crunch to your vegetarian lasagna.

Mix the mozzarella and parmesan cheese together and put almost half of the cheese on top of the mixed vegetables.

Add another layer of lasagna noodles.

Add a layer of marinara sauce on top of the noodles.

Add a layer of the mixed vegetables.

Add a layer of cheese. Save about 1 cup of the cheese to put on top of the lasagna when it is almost done cooking.

Add a layer of lasagna noodles.

Add a layer of marinara sauce. Now, the lasagna is ready to be baked.

Bake for 50 minutes. The last 10 minutes of baking, pull the pan out and sprinkle the last cup of cheese on the lasagna. Bake for the last 10 minutes.
