Ingredients

Mango

Fresh Cilantro

Tomatoes

Carrot

Red Onion

Lime

Cucumber

Jalapeno

Pepper

Salt

Instructions

1

First, you are going to take a large cutting board, and start chopping up all of the ingredients. Dice the mango, but don’t dice them into small pieces. You want the salsa to be thick and hearty so chop them into pieces that are around the size of a penny. Go ahead and do the same thing to the tomatoes. Don’t forget to wash your veggies first though! If you are running out of room on the chopping board, just dump all the cut pieces into the mixing bowl. Now dice the red onion; this one you can do in smaller pieces. Once you are finished with the onion, move on to the carrot and the cucumber. Peel them and then either cut them or shred them. Whichever you prefer. I went ahead and cut mine so I’d have a thicker salsa, but shredding them really pulls everything together nicely, so I’d recommend that, especially with the carrot more so than the cucumber. Next, slice the cilantro into small shreds and toss them into the mixture, too. I didn’t add any in my salsa, but feel free to throw in some avocado as well.

Once everything is chopped and in the mixing bowl, squeeze the lime and jalapeno juice into the mixture, and start mixing the salsa. Once everything is covered with the liquids, add some salt, pepper, and even a little cayenne if you want it to pop more. If you want to take the spice to the next level, you can dice the jalapeno and include it in mixture.

3

Cover the spicy mango salsa, and let it sit in the fridge for about 30 minutes. This will allow all the spices to soak into the salsa, and when you’re ready to enjoy, place it into a nice bowl and you’re done!
