Quick and Easy Bruschetta

I am a huge fan of tomatoes, so whenever I get a chance to make something with tomatoes, I get very excited. This healthy bruschetta recipe is incredibly tasty and is easy to make! It only takes around 10 minutes and then you’ll have a delicious snack that is kind to your waistline. This is also a great recipe if you are having friends over and want to serve appetizers. Either way, this will definitely be a hit! I love the flavor of the tomatoes mixed with the basil and garlic. My mouth is watering just thinking about it. I am so ready to make this recipe! Let’s get started!

 

I love buying a great artisan loaf of whole wheat bread. These tend to have a hearty crust, and I love a good bread with a crunchy crust. You may be able to have the loaf sliced for you at the store. Toast the slices of bread and scoop a mound of the tomato mixture onto the toast. Let me know if you try out this recipe and what you think. I’d love to hear from you. Enjoy!

Ingredients

2 pounds fresh tomatoes, any variety

1/2 yellow onion

3-4 cloves of garlic

1 bunch fresh basil

Whole wheat bread

Salt

Pepper

Instructions

Slice the tops off your tomatoes. Remove and discard the seeds and liquid from the tomatoes.

Dice the tomatoes and set aside.

Dice the onion and set aside.

Chop the fresh basil.

Mince the garlic. (If the cloves of garlic are large, then use 3 of them. If they are small, then use 4 cloves.)

Mix all the ingredients together, and salt and pepper to taste. (This mixture smells, looks, and tastes scrumptious! I can’t wait to dig in once I finish this recipe!)
