No-Bake Vegan Protein Bars

Many people who embark on a lifestyle change can often become discouraged by adding too much too soon to their daily routine. After a weight-bearing workout session, the body craves protein to rebuild the muscles broken down during a workout. This no-bake, vegan and protein-rich bar blends only 4 ingredients: the chewy goodness of dates, the power of peanut butter, the crunch of almonds and the palate-pleasing taste of chocolate. Easy Life chocolate chips are completely dairy-free lending this protein-packed snack to be completely vegan!  Have fun incorporating your own favorite flavor combinations into these vegan protein bars by using the dates as the base for all of your creations.

Ingredients

15 pitted dates

1 1/2 tbs peanut butter

1/4 c slivered/sliced almonds

1/4 c Enjoy Life mini chocolate chips

Instructions

Place all ingredients into a food processor and pulse until mixture is crumbly and all dates have been broken down.

Line a loaf pan or flat-bottomed container with cling wrap leaving excess cling wrap hanging over the sides. Pour the mixture into the pan and cover the bottom of the pan by pressing the mixture down to shape it. Cover the top of the bars with the excess cling-wrap and refrigerate for an hour to let the bar form.

Pop the bar out of the pan and you are ready to cut the bar into smaller servings (about 6 based on your pan).

Keep vegan protein bars refrigerated to maintain their shape and firmness.
