Kid-Friendly Italian Spiced Green Beans & Brown Rice

There is nothing like a good mixture of vegetables and brown rice that your kids will love. But sometimes, that gets a little boring so this is a way to add delicious spices, vinegar, and tomatoes to make it become pure deliciousness that you and your family will never get tired of. I make this Kid-Friendly Italian-Spiced Green Beans and Brown Rice recipe at least once a week (because I am a kid at heart and sometimes, I can be a little picky), and everyone who has tried it always asks me for the recipe. That is exactly why I have decided to blog about it. I hope you enjoy this yummy dish!

Tip: You can either use an extra large bag of Success “Boil-in-Bag” Brown Rice which takes 10 minutes to cook on the stove or you can use Minsley Cooked Organic Brown Rice which takes 2 minutes to make in the microwave. You can find the Minsley product online.

Ingredients

1 lb frozen green beans

1 medium yellow onion

1 ½ cups cooked brown rice (about ¾ cup dry)

1 clove garlic

1-14.5 oz can Muir Glen Fire-Roasted Tomatoes

1 Tbsp + 1 tsp Italian seasoning

3 tbsp balsamic vinegar

Instructions

Preheat a large sauté pan on medium heat for 2-3 minutes.

While the pan is preheating, microwave the frozen green beans in a bowl for 6 minutes.

Chop the onion into small pieces.

When you have finished chopping the onion, put it in pan and cook until it’s translucent (around 5 minutes) stirring occasionally.

After sautéing the onions, add the garlic and 1 teaspoon of Italian seasonings to the onions and stir.

(Tip: You can add a little bit of water to the pan if the onions begin to stick.)

After 3 minutes, add the green beans to the pan stirring occasionally.

After another 3 minutes, you can add the tomatoes and 1 tbsp of Italian seasoning. You can either blend the can of Muir Glen fire-roasted tomatoes if you would rather have it be more of a sauce or you can add the tomatoes to the pan as they are. These Muir Glen organic tomatoes are always stocked in my pantry, and they are a great addition to any Italian-style dish to make it extra delicious!

After around 5 minutes, add the balsamic vinegar and brown rice to the pan.

Stir occasionally for another 2 minutes, and then remove from the heat and let it sit for 2 minutes.
