Japanese Soba Soup Recipe

Soba Soup is an amazing and healthy vegetarian recipe that can be made using a ingredient uncommon in the US. That’s right…Seaweed! Enjoy this Soba Soup recipe.

Ingredients

1 piece Kombu

1 small piece Wakame

1 inch piece ginger root (peeled and grated)

1 onion (chopped)

1 carrot (sliced)

¼ – ½ lb soba (check label to ensure soba is wheat free!)

¼ cup mugi miso

3 cups water

Instructions

Wash Kombu and Wakame and place in saucepan of water.

Add the ginger and boil gently for 10-20 minutes.

Strain and rinse the Kombu and Wakame.

Chop Wakame into cubes before returning seaweed to the pot of water.

Sauté onion until it becomes transparent, then add onion and carrot to the pot.

Lightly boil for 5 minutes – it should start smelling delicious about now!

Add the Soba then bring to the boil, adding a cup of cold water when the mixture begins to bubble.

Repeat this process with the 2 remaining cups of cold water.

Boil gently for a further 5 minutes, then remove from heat.

Add miso to taste – I recommend adding gradually and taste testing so it doesn’t become overpowering! Remember to never cook miso as live enzymes will be killed off, removing several nutritional perks.

Leave to sit for 5 minutes before serving.
