Grilled Tofu with Garlic

grilled tofu recipeThis grilled tofu with garlic recipe a fun one to make during the hot summer months that has a nice punch of fresh garlic accompanied by the smoky flavor from the grill. This recipe involves a unique technique where you flatten the tofu before you place it in the marinade, creating beautiful triangle pieces that are full of flavor and even meat eaters will love.

It is best to start this recipe in the beginning of the day and allow the marinade to penetrate the tofu for at least 2 hours. The flattening process will take about 20 minutes, but you can also prepare this recipe the day before and have the pieces marinate overnight. Since you will be grilling the tofu, pair it with fresh seasonal veggies lightly seasoned with sea salt, fresh cracked black pepper, and some extra virgin olive oil. Throw the veggies on the grill the same time as the tofu and have an awesome meal ready in minutes. Naan is a great side dish for this recipe, you can order some to go at your local Indian restaurant, or if you are a baker make some yourself.

This recipe is also great to prepare for a large crowd if you ever feel like entertaining. There is minimal labor but the presentation is incredible.

Ingredients

1 16 oz. package firm tofu

1/4 cup extra virgin olive oil

8 garlic cloves, minced

1 Tbsp Dijon mustard

Juice of 2 large lemons

2 Tbsp fresh thyme, minced

1 tsp Kosher salt

Fresh cracked black pepper

Remove the tofu from the package and place on a cutting board. Carefully cut the tofu in half horizontally. Then cut each half into 2 triangles, you should now have four triangles. Place the tofu on a baking sheet and the cover the top with another baking sheet. Place a couple of bricks or other heavy item on top of the second baking sheet and place it in the refrigerator for at least 20 minutes to flatten the pieces.

While the tofu is flattening, make the marinade. In a mixing bowl, whisk the remaining ingredients and set aside at room temperature. After 20 minutes, remove the tofu, which should be flat and place in a zip lock back. Pour the marinade into the bag, seal the bag, and place in the refrigerator for at least 1 hour, or up to 4 hours.

Prepare the grill for medium heat. Remove the tofu from the marinade, and reserve the marinade. Place the pieces directly over the heat and grill the pieces for 5 minutes on each side, basting the pieces with the reserved marinade.

Once the tofu has grilled for 10 minutes, remove from the heat and serve immediately.

The marinade can also be used for veggies on the grill as well, just brush the marinade over the veggies as they grill. Asparagus, zucchini, summer squash, and even artichokes are perfect for this recipe.
