Caprese Salad

The caprese salad is one of the easiest and most delicious dishes you’ll ever prepare. This Italian favorite has been around for years, but many people don’t know how easy it is to make. The downside to the dish is that it can be expensive. The fresh basil and mozzarella especially, but it sure is delicious!

Ingredients

2 small red beets (about 4 oz.)

3 tbsp. olive oil

1 tbsp. whole coriander seeds

2 cups loosely packed cilantro leaves, plus more to garnish

1 cup loosely packed mint leaves

1 tablespoon vegetable oil

1 onion, chopped

2 tablespoons brown sugar

1/2 cup 35% cream

Instructions

Wash and cut 20 cherry tomatoes in half. Make sure to cut them vertically instead of horizontally as it keeps the juices more intact. Split them up into the serving bowls you want to serve them in.

Add Bocconcini (small round mozzarella balls) in with the tomatoes.

Drizzle some water over fresh basil to clean it and then place in with the tomatoes and Bocconcini. If you’d like, you can cut the basil into smaller pieces or shreds.

Top with fresh ground pepper, a hint of salt, a little olive oil and a couple of drops of Balsamic Vinegarette. Do not put too much balasmic in or it will overpower the dish.
