  • 1 Box Macaroni Shells
  • 1/4 Cup Vegan Butter
  • 1/3 Cup Flour
  • 2 3/4 Cup Almond or Coconut Milk
  • 1/2 Cup Nutritional Yeast
  • 2 tsp Sea Salt
  • 3 tsp Soy Sauce (or Bragg's Amino)
  • 1/2 tsp garlic powder

vegan mac and cheeseWhen I made the switch to eating Vegan, one of the foods I missed the most was Mac-N-Cheese.  After playing around with several recipes, I have come up with the following vegan mac and cheese recipe that I think is pretty darn good.

Vegan Mac and Cheese Instructions

1. Bring a medium size pot of water to boil.

2. Add shells.

3. Cook for 12-15 minutes or until shells are tender.

4. Drain water.

5. While the shells are cooking, place a small sauce pan on medium heat.

6. Add Butter and flour.

7. Make a roux by whisking together for 3-4 minutes.

8. Add Milk, Nutritional Yeast, Sea Salt, Soy Sauce, and Garlic Powder.

9. Increase the heat to high and bring the mixture to a boil.

10. Once boiling, reduce the heat to low.

11. The mixture will thicken during this time (5-8 min).

12. Pour “cheese” sauce over the shells and enjoy!

    I severely underestimated this recipe. I, too, have tried so many vegan Mac recipes which have been pretty good, but I always find my self looking for new ones. Due to my lack of ingredients for more complex recipes, the simplicity of this recipe drew me in. I am SO SO glad I tried it — there is so much flavor. It’s tangy, creamy, and cheesy. Seriously, try this; I’ve just added it to my meal rotation. Thanks so much for sharing!

      I’m so glad you liked it! Cheese sauce is great over other foods too (like baked potato with vegan chili or broccoli….etc).
