  • 1 clove of garlic (½ tsp), minced
  • 2 scallions, chopped
  • Salt
  • Pepper

When I entertain for my friends and family, I like to make dishes that not only taste yummy, but also look nice. That is why I love this dish. Even though it takes some time to make, it is still an easy dish to prepare. Most of the time is just for the potatoes to cook. Even if you are a little hesitant when it comes to cooking, you can do this! It may look intimidating since it looks like something a fancy restaurant would serve, but I promise, it’s not difficult. Try making these vegan twice baked potatoes, and you will definitely impress yourself and your guests!

The ingredients

1)      Preheat the oven to 400 degrees.

2)      Wash the potatoes in cool water, and wrap them in foil.

3)      Place the 3 foil-wrapped potatoes on a baking sheet.

4)      Bake for 1 hour. If you are using larger potatoes, you may need to bake them for a little longer.

How to cut the potato

5)      Take the potatoes out of the foil, and cut them in half lengthwise.

6)      Leave the oven on at 400 degrees.

7)      Gently scoop out the potato leaving a ring of potato around the edge near the skin. Be careful to do this gently so you don’t tear the potato skin.

8)      Mash the potatoes. You can either use a hand masher or a hand held electric mixer.

9)      Add the Silk Almond Milk, garlic, and scallions to the mashed potatoes, and salt and pepper to taste.

10)   Now, you are going to put the filling from 6 halves into 3 of the halves so they can be mounded. (Basically, it is 1 whole potato in 1 half of a potato.) When you put the potatoes into the skin, you can use a spoon or you can pipe them in if you want them to be extra pretty. To easily pipe them, put the mashed potatoes in a Ziploc bag and cut one of the bottom corners off the bag. You want the opening to be about 1 centimeter. Then just twist the bag and squeeze until the potatoes start coming out of the corner. This is especially nice to do if you are entertaining, and it’s easy to do, but looks very elegant.

11)   Line the baking sheet with foil, and place the 3 potato skins in the foil.

12)   Put the potatoes back in the oven for 8 to 10 minutes.

13)   Broil the potatoes for an additional 2 to 5 minutes or until they are lightly brown on top.

That’s it! I know it took a little while to prepare this accompaniment, but now you have a beautiful side dish to serve to yourself, your family or your guests.
