Ingredients
  • 2 grapefruits
  • 2 large navel oranges
  • 1/4 cup honey
  • 1/4 cup sugar
  • 2-2 1/2 pounds of sweet potato
  • 1 teaspoon salt

I have been thinking about different ways to make sweet potatoes. Everyone loves the mashed sweet potatoes with the marshmallows on top, but I needed to find a sweet alternative that my family and guests would love that was healthier. I started playing with the idea of using fruit and came up with this great substitute. This recipe for citrus sweet potato got my family’s approval. I think your family and friends will love it, too.

1) Zest one of the large oranges and set the zest aside.

2) Peel the rind off your grapefruits and oranges and section the fruit by cutting between the membranes. Do the sectioning over a bowl so that you can catch any of the juices from the fruit. After sectioning the fruit, go ahead and squeeze out any excess juice from the rind and the membrane area of the fruit. You want to try and catch about 1/2 cup of combined juice from the 4 pieces of fruit. Set aside the juice and the sectioned fruit.

3) Peel your sweet potatoes and cut them up into about 1″ pieces or chunks.

4) Put the honey and sugar in a large skillet over high heat. Stir until the sugar dissolves and the mix is light brown. This should take about 5 minutes.

5) Add the sweet potatoes to the skillet. Try to do this in a single layer so that they are all touching the bottom of the skillet. Pour the juice over the sweet potatoes, and add the zest to skillet. At this point, you can also add the salt to the skillet. Stir it once to get everything coated and then make sure you have it back in a single layer. Cover the skillet and bring to a boil. As soon as it boils, turn it down to low heat, or a simmer, for about 25 minutes.

6) Uncover the skillet and cook on medium high heat until the liquid evaporates and becomes a thick glaze. This should take about 3-5 minutes. Toss in your sectioned fruit and serve.
