Ingredients
  • 3 cups organic quick oats
  • 1 cup nonfat plain Greek yogurt
  • 1/4 cup organic honey
  • pinch of organic ground cinnamon
  • pinch of organic nutmeg
  • pinch of sea salt
  • 1 cup organic blueberries, raspberries or strawberries
  • 4 teaspoons organic brown sugar (optional)
  • 1/2 cup organic toasted sliced almonds (optional)

Making a healthy breakfast every morning is quite a challenge for most people with demanding schedules. Creating a healthy meal plan in general is quite a triumph for those that are good at it, so thank goodness for meal planning services and recipe clubs like Pick Me Meal Club. Their chefs provided this scrumptious recipe. Finding yourself waking up with the creativity it takes to prepare the most important meal of the day is almost an art. Blogs are dedicated to it. Aisles of cookbooks are devoted to it. Doctors go on and on about it. Even my personal trainer wants my breakfasts to take higher priority. All this is easier said than done. I’ve resorted to smoothies many a day when the thought of whipping up a gourmet breakfast was just out of the picture. Funny thing is, brunch is my middle name. Seriously, I could eat brunch every single meal of the day. It’s such an intriguing and enticing meal time, one that allows charming women to drink early in the day and friends to gather over pastries when they otherwise would be running errands. So with my love for brunching, I’ve discovered numerous little tricks to make breakfast meals more exciting, and almost addictive.

By simply paying attention to the menus at your favorite restaurants, you can work wonders in the kitchen for healthy breakfast recipes that take little time and don’t break the bank. On one of my recent brunch marathons during the summer, I fell in love with southern style cheesy grits. Oh, was it delightful! Anything with butter and cheese can’t be bad right? And while I am a sucker for creaminess, all those saturated fats probably wouldn’t work out to be the best option for a daily staple meal idea. Luckily, I had discovered a cookbook that hopped on the lean green cooking machine bandwagon that mentioned adding a bit of yogurt to certain breakfast staples makes them more delicious in more ways than one. What a killer idea! Yogurt in quick breads makes them more tender. Yogurt in oatmeal makes it creamier. So that is where I began my journey and haven’t looked back since. I’m not one for granola like most health nuts, but I love a good parfait.

This creamy berry oatmeal recipe is a mix of both worlds by adding thick vanilla yogurt with granola toppings and a healthy dose of berries swirled in for the ultimate breakfast meal in under 5 minutes!

5 Minute Berry Oatmeal Instructions

1. Bring 3 cups of water to a boil in a medium saucepan over high heat.

2. Add the oats, stir, and turn off heat.

berry oatmeal 3. Once the oats are plump, about 4 minutes, stir in the yogurt, honey, cinnamon, nutmeg, and salt.

4. Gently fold in the berries.

5. If you’re like me, go ahead and sprinkle each serving with one teaspoon of brown sugar and two tablespoons of almonds.

Voila! Breakfast is served.
